As food businesses were forced to adapt to the pandemic over the past year, Portland’s taco spots managed to hang in there — partly due to the resilience of the restaurant industry, partly because tacos are well suited for outdoor dining and takeout. Vegans and vegetarians have no shortage of options, as many taco shops offer at least one meatless or can-be-made-vegan item. In addition to covering Mexican restaurants and food carts serving complex guisados and juicy nopales with spicy salsas on hand-pressed tortillas, this map also explores other meatless interpretations: seitan asada, fried tofu chicharrón, beer-battered banana blossom “fish,” and even panko-breaded pea protein “shrimp.”

The points on this map guide are not ranked; rather, they’re organized geographically.

A number of Portland restaurants have resumed outdoor dine-in service. The level of service offered is indicated on each map point. Polo Bañuelos and Carlos Reynoso, behind the pop-up Mis Tacones, describe their tacos as a mashup of Los Angeles street style and Baja California, Mexico style. Their tortillas are hand-pressed to order, then filled with extra juicy al pastor, asada, and cilantro-lime-marinated house-made seitan, dressed with chipotle crema and salsas. Inspired by Gay4U in Oakland, Mis Tacones provides free meals to trans people of color, and plans to set up a pay-it-forward system soon. Since opening a shop on Morrison, Plant Based Papi has garnered attention for its vegan takes on seafood dishes and In-N-Out burgers. However, Jewan Manuel’s pop-up began with tacos, which remain the heart of the menu on Tuesdays. The selection rotates, but one can expect to find comforting creations, from chicken-fried jackfruit tacos drizzled with agave habanero sauce to crispy jackfruit birria tacos served with consome for dipping, and even a taco loaded with the restaurant’s popular jalapeno mac with cashew cheese. This Mexico City street food cart on Alberta layers corn tortillas with red rice, meatless guisados, vegan sour cream, and house-made salsas. First timers can order the four taco bundle — chipotle-braised jackfruit and caramelized onion tinga, garlicky mushrooms, fried tofu chicharrón, and jackfruit suadero — then add on the esquites (corn in a cup), which comes topped with house-made almond queso fresco. Out of the meatless fillings, the soy chorizo and cleverly named Impastor — adobo-marinated cauliflower instead of pork — pack the most flavor.
