<p>Taking over the former Palace Cakes venue, the bakery takes special orders and prepares sweet and savory goods six days a week</p> <p>It's amazing what an Easy Bake Oven can do. <b>Jenni Welliver</b> says that's where it all started, and today, April 12, she opens the doors to her first bakery, <a href="http://www.littleredsbakeshop.com/">Little Red's Bakeshop</a>, at 1401 SW Yamhill. Welliver trained in the Bread & Pastry program at San Francisco Baking Institute and has baking experience at San Francisco's <b>Thorough Bread & Pastry </b>and Portland's <b>McTavish Shortbread </b>and <b>Lovejoy Bakers</b>, and she first launched Little Red's Bakery in Portland in 2013 (you may have even seen her at local farmers markets).</p>
<p>Now having taken over the former <a href="http://pdx.eater.com/2016/2/18/11048428/two-tarts-and-palace-cakes-bakeries-to-close-elizabeth-beekly">Palace Cakes</a> venue, Welliver is still <span>baking special and wholesale orders while also preparing a wealth of baked goods. </span><span>For now, you can find</span><span> s</span><span>weet and savory pastries, including brioche, cinnamon buns, scones, muffins, rustic tarts, and hand pies, as well as brownies, cookies, and cakes. </span><span>"We're also currently testing danish and croissant doughs," says Welliver. </span></p>

<p>Will its "hot dogologists" hit the sweet spot between the classic and gourmet hot dog?</p> <p>"No one is really specializing in what we're doing," says <a data-ref-index="0" href="http://www.spikeshotdogs.com/#" style="line-height: 1.24;">Spike's Hot Dogs</a> co-owner <b style="line-height: 1.24;">Spike Friedman</b>, and you can test the theory today at the now-open Spike's Hot Dogs, located inside Portland's Galleria (home to Target), at SW 9th and Alder. With<a href="http://pdx.eater.com/2016/2/29/11135026/hop-dog-closes-downtown-hot-dog-restaurant-portland"> the recent shuttering</a> of <b>Micah Camden</b> and <b>Katie Poppe</b>'s ambitious <a href="http://pdx.eater.com/venue/hop-dog">Hop Dog</a>, the future of the gourmet hot dog lies in the balance.</p>
<p><span>Spike's signature hot dogs are made by </span><span>Hill Premium Meats in Pendleton, Oregon, and the dogs are "one-hundred-percent hormone and antibiotic free, with no gluten, fillers, extenders, or artificial ingredients," according to the website. The dogs are made using "naturally raised livestock," and the only additives are "fresh spices."</span></p>
<p><span>As the below menu shows, the dogs come in a variety of flavors, and then there's the condiment bar's full 25 feet of complimentary condiments, including Walla Walla sweet onions and Spike's signature mustards. Find veggie dogs and corn dogs, too, and most hot dogs run $6.25. Not sure what to get? Ask your friendly neighborhood "hot dogologist" (the restaurant's nickname for its employees).</span></p>

<p>Say hello to Akasaru Ramen</p> <p>The latest proof the Portland ramen-plosion knows no end comes in the form of Akasaru Ramen. Located at 2712 NE Alberta, it officially opens at noon today, April 11, and it will serve a small izakaya menu and four ramens (see menus below). Akasaru is the second restaurant by<b> Tommy Shin</b>, owner of <a href="http://pdx.eater.com/venue/samurai-blue">Samurai Blue</a>, the environmentally friendly sushi and contemporary Japanese tapas restaurant on North Mississippi Avenue.</p>

<p>Speaking with Eater, Shin says he opened Akasaru after seeing how much his customers loved the ramen at Samurai Blue. Akasaru offers a chicken and dashi-based broth, which Shin says is on the lighter side of the ramen spectrum, and the ramen comes with pork belly and shrimp wontons. Fresh shrimp is the key to the wonton's crunch, says Shin. You can order the ramen in shoyu, miso, and spicy versions, and there's a vegetarian ramen on offer, as well.</p>
<p>Expect house-made touches like kimchi featuring sea salt and anchovy paste from Korea and a ginger-honey lemonade. Drinks include soft drinks, tap beer from Stormbreaker Brewing, Sapporo, warm and cold sake, and the Japanese soda, Ramune, which Shin says is great for kids because it comes with a marble.</p>
<p>Inside, Akasaru offers counter service and seats 22, with two picnic tables outside for sidewalk seating. Shin aims for a Japan-meets-Portland vibe, with a large mural featuring red monkeys, and he says Akasaru means both "open wide" and "monkey."</p>
